For three seasons, Victory Gardens designed, planted, and maintained the rooftop garden at the Vancouver Club, a private club, hotel, and restaurant in Vancouver. We grew a variety of specialty items that the chef incorporated into dishes, garnishes, and cocktails. The garden featured yuzu trees, fig trees, Chilean guava, peppers, nasturtiums, edible flowers, shiso, red-vein sorrel, mizuna, cucamelons, herbs, and more. With seating for lunch, dinner, and private events, the garden served as both a productive space and a natural setting for guests to enjoy.
